Moist, delicious and vanillicious, this is an easy go-to recipe for cake or cupcakes. Warning though, this recipe is huge making a 33x23x7 cm cake or 36 cupcakes.
- 3 cups flour
- 2 cups sugar
- 1 tbsp baking powder
- 3/4 tsp salt
- 1 cup butter (room temperature)
- 4 large eggs
- 1 cup milk
- 1 tsp vanilla extract
Heat the oven to 160c/325f degrees
Combine the flour (preferably sifted), baking powder, salt and vanilla in a large bowl.
In the bowl of an electric mixer, cream the butter and sugar together and then add then eggs and milk. Slowly incorporate the dry ingredients until fully mixed.
For cake, pour into a greased and floured 33 by 23 cm baking pan and cook until set a toothpick tester comes out clean, approximately 35-40 minutes.*
For cupcakes, pour into lined cupcake trays and bake for 17-20 minutes and a toothpick tester comes out clean.
*Honestly, our oven was being temperamental and it was the first time we used the recipe for a cake so it was at 148c/300f degrees for about 50-55 minutes before it was ready. We just had to keep an eye on it.
